EPIC Meatballs

requiring absolutely minimal prep, these meatballs will blow everyone away! our meatball mix blends lean randall lineback with meatcrafters’ epic naked bacon. it is fully seasoned, so we recommend adding no additional salt or seasonings until after everything is cooked and you have a chance to try it. INGREDIENTS

1lb EPIC Randall Meatball Mix

1/2 cup Milk

1/2 cup Bread Crumbs (unseasoned)

1/2 cup Grated Parmesan Cheese

For a lower sodium option, replace Parmesan Cheese with 1 medium egg (or use 1/4 cup Parmesan)

Low-sodium Marinara Sauce or a combination of canned diced and crushed tomatoes

PREPARATION: Meatballs in Marinara

  1. Mix milk and breadcrumbs in a small bowl— let sit a few minutes so it becomes thick and soggy.

  2. Fill a medium (high-walled) pot to desired height with Marinara or a combination of canned tomatoes (do not add salt)— you need enough to cover your meatballs while they simmer (2 28-oz cans should be enough). Bring to a simmer.

  3. As tomato sauce heats up, place meatball mix in a medium bowl. Add thickened milk and breadcrumb mixture. Mix until roughly distributed.

  4. Add parmesan (or egg) and mix until thoroughly incorporated.

  5. Form into roughly 2 Tbsp meatballs— the recipe makes about 25 meatballs.

  6. Add meatballs to marinara, put the lid on the pot. Lower temperature to a low simmer. Cook for 30 minutes.

  7. That’s it! 40 minutes to Meatball Marinara!

PREPARATION: Oven Baked Meatballs

  1. Mix milk and breadcrumbs in a small bowl— let sit a few minutes so it becomes thick and soggy.

  2. Heat oven to 375 degrees. Place rack in the center of the oven.

  3. Place meatball mix in a medium bowl. Add thickened milk and breadcrumb mixture. Mix until roughly distributed.

  4. Add parmesan (or egg) and mix until thoroughly incorporated.

  5. Form into roughly 2 Tbsp meatballs— the recipe makes about 25 meatballs. Place on a lightly greased (or nonstick) rimmed baking sheet.

  6. Cook for 18-20 minutes.

  7. That’s it! 35 minutes to Baked Meatball Bliss!
