Skewered Scallopini
As is the case for a number of our “recipes” this is a kind of “basics only” situation. There is a TON of room for adding your own flair.
SKEWER IT!
If using wooden skewers (as shown in the photos above), soak in water for at least 30 minutes before grilling so they don’t go up in smoke!
Cut each steak into 3-4 long strips— no need to tenderize
Season with salt and pepper only if you’re a purist. Otherwise marinate with a bit of your favorite BBQ sauce, teriyaki sauce, etc.
Thread onto skewers. (if you want things saucy but don’t want to get covered in marinade, thread the skewers first, then baste lightly with the sauce of your choice).
Toss on a searing hot grill for about a minute each side.
…OR if you don’t have a grill (or don’t feel like dealing with your grill at this particular moment), cook them in a large sauté pan.
