Skewered Scallopini

As is the case for a number of our “recipes” this is a kind of “basics only” situation. There is a TON of room for adding your own flair.

SKEWER IT!

  • If using wooden skewers (as shown in the photos above), soak in water for at least 30 minutes before grilling so they don’t go up in smoke!

  • Cut each steak into 3-4 long strips— no need to tenderize

  • Season with salt and pepper only if you’re a purist. Otherwise marinate with a bit of your favorite BBQ sauce, teriyaki sauce, etc.

  • Thread onto skewers. (if you want things saucy but don’t want to get covered in marinade, thread the skewers first, then baste lightly with the sauce of your choice).

  • Toss on a searing hot grill for about a minute each side.

  • …OR if you don’t have a grill (or don’t feel like dealing with your grill at this particular moment), cook them in a large sauté pan.
