These products have end cuts or petite cuts available— choose from the drop-down menu on the product page. Some are simply small versions of our products that we have in limited quantities (our heritage animals can vary considerably in size), while others are from the tapered ends of cuts like New York Strip, Ribeye, and Tenderloin. Same wonderful flavor and texture as their more standard siblings, but more cost-effective!
