For 4 eggs, brown 1/2 lb of chorizo in 1-2 tbsp oil at medium high heat in a large sauté pan. Add a 28-oz can of diced tomatoes and simmer for about 20 minutes. Crack eggs into the tomato-chorizo mixture, cover and let cook for 6-8 minutes.
