There are endless options for brisket out there. these are some we thought worth sharing. the main things to remember here are:
This is a grass-fed brisket, so think about lowering the temperature a bit in order to ensure tenderness. we recommend keeping your slow-cooking temperature below 300 if possible.
This is a packer-cut brisket (meaning we keep the flat and point together)- this will extend the cooking time a bit, since it’ll be a bigger piece of meat than most recipes call for.
Because it’s a thicker cut of meat than just a flat, we recommend brining over night (or covering with dry rub and leaving that in the fridge overnight) if you can.
